Pork lion, hand selected and hand-trimmed with care to leave a think covering layer of fat. Seasoned with Mediterranean spiced and herb. Slow aging and drying results in a smooth balance flavour. Serve as an appetizer or as a main course with fresh lettuce, arugula salad and cherry tomatoes.
